Pengolahan pangan unggulan pisang sebagai produk makanan tambahan pada balita stunting

Abstract

Stunting menjadi permasalahan di desa Srigonco. Intervensi dalam mencegahnya melalui potensi pangan unggulan berupa pisang sebagai makanan tambahan balita. Tujuan dari program ini adalah untuk meningaktkan keterampilan kader posyandu balita dalam mengolah produk pangan unggulan berupa pisang untuk mencegah stunting. Metode yang digunakan dengan melalui FGD, pelatihan, dan evaluasi program/rencana tindak lanjut. Sasaranya adalah kader posyandu balita, perangkat desa, dan tenaga kesehatan. Alat ukur yang digunakan adalah lembar wawancara terarah, kuesioner pengetahuan stunting dan pengolahan makanan pisang, serta cek list keterampilan dalam mengolah pisang. Hasilnya mitra mengingingkan terdapat program pencegahan stunting melalui pengolahan pangan unggulan, nilai pengetahuan sebelum dan sesudah pelatihan (0,000), nilai keterampilan dalam mengolah pisang (78,71±12,78), dan evluasi program adalah dengan menindak lanjuti program tersebut sebagai makanan tambahan di posyandu. Kesimpulan bahwa program pelatihan pengolahan pisang menjadi makanan tambahan terdapat perubahan pada pengetahuan serta keterampilan kader kesehatan setelah diberikan pelatihan.
